It’s berry season. Time for muffins with raspberries or blueberries, as my daughter Maren makes them. These are really easy muffins to make and they taste great. A bonus is that they’re not full of sugar either.

I’m going to give you Maren’s berry muffin recipe and her buttermilk cornmeal muffin recipe today. I know you’ll enjoy them.

Scrumptious Blueberry or Raspberry Oat Muffins

Preheat oven to 400°F

Grease muffin tin

Ingredients:

1 cup oats

1 cup buttermilk

1 egg beaten

¼ cup vegetable oil or melted butter

1 cup all-purpose flour

1 tsp baking powder

½ tsp baking soda

½ tsp salt

¾ cup lightly packed brown sugar

1 cup fresh or frozen blueberries or raspberries, thawed and drained

Method:

Combine oats and buttermilk in a bowl and let stand for 5-10 minutes. Add egg and butter; blend well.

In another bowl combine flour, baking powder, baking soda, salt and brown sugar. Add oat mixture, stirring just until moistened. Fold in berries.

Spoon batter into prepared muffin tin, filling to top. Makes 9-12 muffins. Bake for 15-20 minutes or until golden brown.

Notes: If you don’t have buttermilk, place 1 tablespoon white vinegar in a one-cup measure, fill with milk and let stand a few minutes till mixture sours. If you don’t eat these muffins the first day you make them, refrigerate to preserve berries.

Buttermilk Cornmeal Muffins

Preheat oven to 400°F

Muffin tin, greased or paper lined

Ingredients:

1 cup cornmeal

1 ½ cups buttermilk

1 ¼ cups all-purpose flour

1 ½ tsp baking powder

1 tsp baking soda

1 tsp salt

½ cup sugar

1 egg

1/3 cup melted butter, cooled or canola oil

Method:

In a bowl, combine cornmeal and buttermilk. Set aside.

In another bowl combine flour, baking powder, baking soda, salt and sugar.

In another bowl whisk together egg and butter or oil. Add cornmeal mixture; stir well. Add to flour mixture; stir until just blended. Do not over-mix.

Spoon batter into prepared muffin tin, filling two-thirds full. Makes 9-12 muffins. Bake in preheated oven for 15 minutes.
