FROM MY PANTRY: Try some low-carb tortillas

This recipe is especially for Monique who has been waiting patiently to make these tortillas. If you are following a low-carb diet, these tortillas will make a nice change . You just place a ball of the dough into the press, and voila, you have a tortilla formed perfectly.

INGREDIENTS:

1 cup soy protein isolate (this has only protein, no carbs)

1/2 cup oat flour

1/4 cup vital wheat gluten

1/2 cup almond flour (ground almonds)

1/2 cup organic  ground golden flax seed

1 tsp. baking powder

1/2 cup good quality vegetable oil

approximately 1 cup of cold water

METHOD:

-In a large bowl, combine the soy protein isolate, oat flour, wheat gluten, almond flour, ground flaxseed and baking powder. Use a whisk to fluff up the ingredients.

-Using a wooden spoon to mix, add the 1/2 cup of oil and stir to blend.

-Now. a little bit at a time, add in the cold water, stirring until the dough comes together in a ball. You will use nearly all of the cup of water.

-Sprinkle your counter top with a little bit of oat flour.

-Turn the ball of dough out onto your work surface and knead it for a few minutes.

-Divide the dough into 15 portions. Roll the dough into uniform balls.

-Take your tortilla press and place a sheet of parchment or waxed paper on the bottom half.

-Place one tortilla ball in the centre of the base of the press. Cover this with a second sheet of parchment paper and flip down the top lid of the press. Using the handle, press firmly to flatten and shape your tortilla.

-Lift the lid and remove the tortilla. Continue to press and form the remaining tortillas.

-If you wish, you can roll them out even thinner, using a floured rolling pin, once you have formed them in the tortilla press.

-In a heated non-stick skillet, fry the tortillas turning once  when you see little brown spots forming on the surface of the tortilla.

-Continue frying the tortillas. Place them on a wire cooling rack to cool as they are finished.

-Extras may be stored in a sealed container in your fridge or freezer. Place a sheet of waxed paper between each layer to prevent sticking .

-This recipe makes 15 - 6" tortillas. Each tortilla has only 2.16 carbs. ENJOY!
