Cornwall, Ontario – The Encore Education Centre hosted its fundraising spaghetti dinner at Knox-St Paul’s United Church on April 6, 2024. The Italian-themed event, attended by over 50 guests, featured a delightful menu of minestrone soup, Caesar salad, spaghetti with vegetarian tomato sauce, and ice cream sundaes for dessert.

Linda Mercer, President of The Encore Education Centre Board of Directors, shared her enthusiasm for the wide range of classes offered by the centre, “From how to age gracefully to how to keep your mind going and stay physically active, we cover a wide range of topics. We also offer courses on history, writing, and computer topics like AI, smartphones, and apps.”

This fundraiser supports the non-profit organization’s diverse educational programs, such as non-credit educational courses, info sessions, and workshops for adults 50+. Despite the fundraiser’s success, Mercer emphasized the need for sustainable funding to continue providing these valuable learning opportunities.
